Most home cooks find it difficult to cook a turkey so that it retains a moist soft texture.
The secret is to slow cook it in about two inches of water and (depends on the size) after an appropriate time, start testing the drumsticks to see how resistant they are. When there at the point that they would easily break away from the body, by which time most of the water will have evaporated, start basting with the juices.
