speaking from a personal perspective- there are other sugar disorders in addition to diabetes 1 and 2 where we have to eat low GI foods or run the risk of having a hypo and slipping into a coma while we are asleep. Personally I don't care if it's a bit more expensive than the cheaper equivalent, I'd rather not run the risk.
- so from my perspective the market is even broader than it initially appears...
