Flight500, yes you can control all 3 monitors with one keyboard and mouse. I'm just running two video cards in one computer so window just divides the desktop into 3 screens.
It is possible to control multiple computers connected to one network with a piece of software called Synergy. It even works on different types of computers (like a mac or linux box).
I sometimes control my laptop using synergy and use it as a fourth screen.
