    Fusion Spanish Fish Stew:

    In a deep pan fry the following in few splashes of oil:
    1 diced onion.
    1 diced fennel bulbs.
    1 diced chorizo.

    Then add the following and simmer for at least ten minutes:
    2 cans tomatoes.
    2 to 3 cups seafood stock.
    ½ cup white wine.
    1 to 2 tablespoon spanish spice mix.

    2 tablespoons soy sauce.
    2 tablespoon worcestershire.
    3 cloves pressed garlic.

    Then lightly poach the following:
    500 gm white fish fillets coated in flour and fried in olive oil.
    200 gm raw prawns or / and 400 gm mussels in shells.
    100 gm sliced toasted almonds.


    thicken slightly with cornflour if desired.
