I don't think that is the sole strategy of PBM.
The holy grail is to engineer it to look and taste like the real deal. To do away with the animal from the plant to animal to meat.
Meat is big business. The global industry is worth over $2 trillion.
Maybe JAT isn't after the holy grail and want to make awful tasting vegetarian not meat at all.
