They give one person an advantage. Doesn't matter how or why. Tell the person what the upcoming dish will be, give that person overnight advantage to think about it and give that person the recipe!
Then thay are all meant to pit their skills "equally" againt each other. Wonder how different the result would be if it was all really fair and equal. Major flaw in the game strategy. Diminishes the whole value for me.
