Yeah I don’t like to cook it in a soup as it can get very slimy and dry them first after cleaning them. Then cut them and fry them with onion/garlic/tomatoes and some curry powder.
@AJ7 I know what you mean about over ripe but there are different types of them. I got the seeds for this one from a Vietnamese friend and they can go very long and thick before over ripping. Offcourse when they over ripe they Don’t taste nice and hardens up.
An example of over ripe is this one which I’m leaving in the plants for seeds.
