that stuff is not actually flathead, it’s Argentine stick fish AKA South American flathead, it’s actually no relation to real flathead.
hence why it’s so much cheaper.
It’s the same as the so called frozen “whiting” you get in supermarkets, it’s not real whiting but a deeper water mass trawled fish…
naming conventions for imported seafood can be very misleading. Not that the fish is inherently bad, it’s just not the real deal.
