@Margaret63 - all the good cookbooks tell you to peel artichokes - I have never grown them, so don't know what they look like when freshly picked, but the ones you buy in the shops can be boiled as is, in slightly acidulated water - then you can take the coarse outer leaves off, easily.
I even corrected a nervous condition I had from working with a boss who spent his days screaming at his employees - by, firstly, resigning and secondly drinking artichoke juice, made from boiling just one artichoke with the stem and leaves on and bottling the water and drinking this. It corrected something that had gone majorly wrong in my digestive system and not even my doctor could fix (after operating on my appendix and doing a laporotomy - doctors are just as prone to mistakes as 'normal' people) - he gave up.
I cured myself - still like artichokes, but purchase them in jars.
