Thats how it works. 90+ % of the US beef production is grained and the trim from that is too fatty to make grinding (burger) beef so they rely on the 90CL beef we send them from our much leaner grass fed industry. Mainly old cows & bulls + the lean trim from prime cattle. At the moment they are getting more lean beef from their herd reduction and that is amidst world wide shortage of Beef . Fun times ahead. Our best cull cows now back up near $4kilo already so things will be interesting when we return to El Nina conditions which usually results in the North Hemisphere getting wetter.
