Because the minute immigration is cut all the usual suspects in the business, banking and real estate lobby will start squealing.
Some of the "skills" are we apparently need are laughable. The other problem is a lot of the truly skilled immigrants arrive and quickly figure out what Australia rewards and turn their hands to being real estate investors and developers, which never addresses the actual skills shortage. There's no shortage of Australians willing to get a loan and bid up property, there's no need to import more.
Other things like Uber eats only exists because of the most desperate immigrants, who really shouldn't be here in the first place, but are here as an "export" doing mickey mouse courses at sham RTOs.
