Chicken rice
In a medium pot simmer the following:
4.5 to 5 cups water.
3 cup long grain or jasmine rice.
2 packet of chicken necks.
2 cloves crushed garlic.
2 slices ginger.
And ‘some; of the following is desired
1 whole onion or 2 spring onion.
1 pandan leaf.
1 splash light soy.
1 splash liquid smoke.
1 splash rice wine.
½ teaspoon curry powder.
Sim off scum occasionally if desired
Simmer at low heat for at least 15 minutes
Add more water if required
Remove all solids before serving.
serve with lightly poached chicken or other meat.
