Because you haven't actually extracted the hydrocarbons from the formation with aside wall core. With a formation test tool you allow formation fluid to flow into a chamber. With a DST to you open the formation to surface and let it flow.
You could have a really tight reservoir and you'd still get side wall cores containing trapped hydrocarbons.
