I also use butter, have yet to use what the Indians use, which is 'ghee' - or clarified butter. Normal butter works well, and adds a nice flavour, but do not overheat.
When I get into it, I really enjoy cooking - made some pre-cooked dishes yesterday - enough for 5 days . . . . which saves time in the long run - I always add some fresh veggies as I go along.
