    Christmas roast beef:

    Coat 2 kg beef in the following:
    75 gm butter softened or melted.
    3 minced / diced shallots.
    2 tablespoons malted milk powder.
    1.5 tablespoons worcestershire.
    1 tablespoon poppy seeds.
    2 sprigs fresh thyme or a dessert spoon of dry thyme.
    2 whole cloves.
    1.5 teaspoons salt.
    1.5 teaspoons freshly ground black pepper.

    Turn occasionally

    Barbecue on the charcoal webber with some wet wood chips and the lid on until it gets to 55 to 60 c


    Sauce made in a medium saucepan by bring to a simmer the following:
    1 cup of meat juice or glaze.
    1 cup chicken stock.
    ¼ to ½ cup wine or ¼ cup sherry.

    Thicken slightly with corn flour if desired.
