1 tablespoon sherry.
1 desert spoon butter.
A splash of light soy sauce and / or a pinch or miso.
A pinch of smoke paprika or splash of xo sauce.
Thicken slightly with corn four.
Turn off and stir in the following:
½ further cup of liquid.
2 beaten egg yolks.
Serve with two barbecued fried or poached lobsters or 300 gm lobster meat.
