@Margaret63 I make a tasty dish with sliced eggplant (always salt them after slicing, then let them sit for a while and then wipe the water off) and a main sauce, which is the Italian Spaghetti Bolognese sauce and sliced peeled potatoes and a cheese sauce for in between one or two layers and on top. 3/4 - 1 hr in a medium oven, yumms!! I am sure it would also work with a good Italian 'just Tomato sauce', if you are off meat. Tau
