In a pan sear two sirloin steaks, lightly on both sides and on edges, by clamping them with metal tongs
cool under running water or in iced water.
Slice.
Make in a small bowl, by combining the following:
6 tablespoons soy sauce
¼ cup mirin
2 spring onions very thinly sliced
2 tablespoons brown sugar
1 or 2 tablespoons lemon or yuzu juice
2 tablespoons minced peeled fresh ginger
2 large sliced garlic cloves
1 teaspoon sesame oil
A splash of liquid smoke.
Arrange beef on serving plates, with the sauce and a smoked paprika powder.
