My theroy is snow melt and the way the thawing snow wakes up the bacteria and fungi in the soil in spring that creates that beautiful balance of dry and sweet. Interestingly I haven't tasted a gruner from the snowy parys of Tasmania new south Wales or new Zealand. If anybody knows of a vineyard that gets plenty of snow here in Oz and grows a grape variety Gruner veltliner, let me know.
