Char Sui:
Marinate the following for at least ½ hour:
300 to 500 gm chicken duck or pork.
3 tablespoon beef or chicken fat.
2 tablespoon brown sugar.
2 cloves pressed garlic.
1 tablespoon pressed ginger.
1 tablespoon liquid honey.
1 tablespoon soy.
1 dessert spoon dark soy.
1 dessert spoon oyster sauce.
¾ teaspoon five spice.
a splash of red food colouring if desired.
Barbecue on the charcoal webber also with some wood chips.
