Barbecue four servings of steak and four servings of seafood on the charcoal webber
Well done on one side and only lightly seared on the other
Gordon barbecue sauce made by frying in a pan the following in a little oil until caramelised :
1 diced onion
3 cloves of garlic
1 tablespoon brown sugar
1 teaspoon smoke paprika
Turn off and add the following:
1 cup total tomato and / or eta sauce
A few splashes Worchester
Oyster citrus emulsion for the seafood made by blending in the food processor:
One cup olive oil
Two egg yokes
Three smoked oysters
A few squeezes citrus juice
A few splashes light soy sauce
