Lamb Shawarma:
Crush the following:
2 pieces coriander.
Seeds from 3 cardamon pods.
Juice of quarter of lemon.
2 cloves garlic.
½ teaspoon cinnamon.
½ teaspoon coriander.
½ teaspoon ginger.
Pinch of nutmeg.
Salt and pepper to taste.
And maybe ½ teaspoon of each of the following:
Allspice.
Cloves.
Oregano.
Rub on 1.5 kg lamb.
Barbecue on the charcoal webber.
Serve on pita bread salad and humas.

A piece of orange zest.
1 sprig of rosemary.
2 teaspoons coriander seeds.
1 teaspoon cumin seeds.
1 teaspoon fennel seeds.
½ teaspoons pepper corns.
1 pinch of saffron.
