Zipperlip,For the Fish try this...
Make 1 circle of baking paper for each portion of fish.
Cut some slices of fennel and place just off centre of each circle.
Place fish portion on top of fennel slices and then top with a few more slices, some ground black pepper,a few of the fennel tips and a slug of good quality olive oil.
Fold the paper circles over the fish and crimp/fold the edge.
Bake in a preheated (190c) oven for 15 - 20 mins.
serve with a splash of homemade salsa verde (plenty of recipes on net)
Its really quick and easy, a very good way to have quality white fish... Enjoy :)
