In a pan brow the following:
1 dozen lamb shoulder chops or 2 kg lamb shoulder.
1 large diced onion.
1 diced carrot.
1 diced capsicum.
1 cup sliced mushrooms.
1 stick of diced celery.
1 cup diced lardons.
Then add the following:
2 cups diced tomatoes or 1 can French style tomatoes.
2 cups water or stock.
½ cup wine.
The peel of ½ orange.
2 tablespoons brown sugar honey or maple syrup.
2 tablespoon soy.
2 tablespoon worcester.
1 dozen anchovies.
2 teabags herbs or rosemery sage and thymes.
1 tablespoon Dijon mustard.
½ teaspoon freshly ground black pepper.
