I can help a bit here with companies following IAS 41. Look at how Canopy Growth used to report their Gross Margin when their primary exchange was in Canada (which uses IFRS):
Below we can see that ECS does the same thing - expenses inventory costs to COGS. Cost of Sales will be over-represented if you don't include Gain on Bios (which can also be a negative number FYI):
