in a saucepan fry the following:

One or two diced onion.
One diced capsicum.
One diced carrot.
Then add the following:
2 to 4 cups stock or canned oxtail soup.
The peel of one orange.
½ cup rosemary.
1 dozen anchovies.
½ dozen cloves garlic.
¼ cup rice wine.
¼ cup soy.
¼ cup tomato paste.
¼ dozen star anise.
¼ dozen bay leaves.
1 to 2 tablespoon apple cider vinegar.
1 tablespoon ginger.
1 tablespoon dark soy.
1 teaspoon thyme.
