You must have had the CeD condition rather then NCGS, it's an autoimmune condition triggered by gluten in genetically susceptible individuals like yourself, people with the HLA-DQ2 and/or HLA-DQ8 genes. About 0.7% of populations from European decendants, about 0.27% Asian thus the lower rates of CeD in Asia.
No-one grows any GM wheat. Not Oz, not US, not anyone except for a handful of scientists doing R&D, Monsanto stopped doing GM wheat research in early 2000's. The wheat the world grows is hexaploid strain, 42 chromosomes and was here about 10,000 years ago, widely eaten from about 6-8000 years ago.
Modern breeding and hybridization has made them yield better etc but has also increased the gluten content from about 8-10% to 10-12% and has also altered the gliadin/gluteniin ratios and has increased the proportion of gluten proteins with immunogenic epitopes which some people speculate that these immuno epitopes is/are potentially linked to higher CeD and NCGS rates, however it's only speculation.
