> coat in oil (pastry brush is good) and salt it both sides let it take it up for about 10 mins
> heat the pan to high temp - no oil in pan it's already on the meat
> for a 1 inch steak 4 minutes for med rare then flip 4 mins again (don't turn it more than once)
> heat a tray in the oven for resting once the steaks cooked in the pan straight on the tray salt it again alfoil or cloth over the top to trap the heat & rest for the same length of time it was cooked for then serve with the resting juices dripped over it
