    Hi Peaceakki. This is really one for a dietician/nutrionist but I'll put in my 5c worth.I guess you have no gall bladder or high triglycerides/cholesterol for the saturated fat restriction, albeit not the best way to put on weight. Lactose intolerance also? And duodenal ulcer! WELL need to be careful with acid foods(tomatoes, citrus fruits, vinegar and pickled goods, chillies or acid producing foods(fats including chocolate) as well as alcohol, caffiene and certain meds including NSAIDs, corticosteroids etc. I take it your on some form of acid suppresion medication too? We need to keep in mind only 1/3 of our cholesterol comes from our diet and fat/cholesterol are an important and needed part of our cells makeup.

    As a supplement, on top of your meals, there are recognised products such as Sustagen and Ensure, both worth a try, and can be made with water.Good balance of protein/carbo but have some fat so check it out first.

    Not really and expert on metabolism but my way of thinking is if your metabolism is fast it means your convert the energy in your food to fat quicker, which has always puzzled me as to why skinny people say they have fast metabolisms. I would think a slow metabolism would allow you to burn the ernergy before it is coverted to fat hence putting on less weight? That aside, vitamin B is important for carbohydrate metabolism and appetite and the mineral lysine has been shown to also help if your appetite is slighly lacking.

    Proteins are obviously a good choice (fish,meat,eggs, nuts) but carbos will probabably help you stack on quicker as they covert to fat easier if you not burning them. Pasta's, rice, bread all good choices but given your lack of using cream or tomato sauces your options may be blandish. I love risotto and if anyone can help Peaceakki with some recipes according to his criteria it may be useful.
