You're right, I was over-generalising a bit. There are a few areas (but not all) where GPUs will start to come under threat. Machine learning will likely reduce GPU demand in many different applications. There's also applications like cryptocurrency where quantum computing has the potential to greatly outperform GPUs, though that's still a few years away. I think I was overgeneralising / confusing some of the things I've previously researched. There are still other areas where GPUs will continue to be needed.

With that said, I still think NVIDIA has to be careful in the coming years as their GPU business will start to be impacted by several new technologies coming out. It will be interesting to see how they respond.
