White Tuna is a marketing name for Escolar in the USA.
In Australia Escolar used to be called Butterfish.
Escolar is a delicious wild caught deep sea fish.
Just don't eat the skin or you'll get the runs.
In Australia it is called Escolar only so don't panic!
In Australia all our wild caught fisheries are sustainably
fished by law. Australian fishermen have been sent broke by
the high AUD making it difficult to export. Also easier for

Over 75% of seafood eaten in Australia is imported.
(Source SFM Annual report 2012).
Support responsible fishing, eat wild caught Aussie fish!
