I saw a clip of that.....but "Tex", the test pilot did that at considerable altitude.......It did prove the structural integrity (and handling properties) of the 707 airframe, eh?

The legendary airshow pilot, Bob Hoover, developed his aerobatic routines in his AeroCommander for the same reason....to sell the aircraft, and continued to do them for what seemed like decades...

Here is a clip of him pouring cold tea from a jug into a glass on top of the instrument panel......while doing a roll....
He would have been (and still is) the best pilot ever....
