Historical note - French colony of Upper and Lower Canada did not have direct access to sugar cane so used Maple Syrup for everything The English settlers in the south always had that option but industrially used sugar cane as the less costly source of sugar (and they had the 'manpower' in the West Indies and southern colonies)
