SAY I bought option shares at 55c and to convert them is 28.5c, I have X amount of shares at 83.5c in the company. Now say the company share price is at 120c, have I just made a 50ish% increase in my initial investment just by converting them ?

Yes, one option = 1 share once converted.
So, given the scenario you have provided, the answer is also yes.
