    hanrahan,i have got an induction cook top and don't have a problem with supermarket meat.i get the pan fairly hot about 7 or 8(goes to 9)steak in to pan for about 2 minutes turn down to about 5 for another 3 or 4 minutes.turn steak and continue to cook on 5 or 6 for a further 4 or 5 minutes.btw steak is about 1-1/4 inches thick.i think you have to keep the heat up to it so as not to "boil it".hope this helps
