Instead of an open meat case why not have a butcher shop inside the store, where you place your order similiar to any other butcher and pay for the product before continuing with the shopping. It's similiar to bunnings section that sells power tools, drill bits and socket sets that requires payments before leaving the section. An in house butcher at Coles would be one step ahead as the product would not been available to the customer until payed for.

Cheese and other high theft items could be sold through the Deli with a similar setup.

To steal a product a person needs access and a way to hide it, remove either one and its game over.

Setting up internal coffee shops/barber with touchscreens at the tables could also work, customer come in for a coffee place an order while they kick back and pick it up when it's finished.

Facial recognition and self serve is not the way to go, the best cctv can't cover everything and is only effective with staff watching the live feed. My business have caught people in the middle of a robbery with live monitoring and we also have endless footage from after the fact that is useless due to people covering theirs faces.
