This isn't all about volumes.
As a consumer, if you think you shouldn't have A1, then it makes no sense not to be able to get every dairy product A1 free, apart from when buying for someone with a very limited diet anyway (i.e. infants).
Therefore a2 have to eventually sell a full range of the most common dairy items to satisfy their customers and keep them in the fold. This is why we will have products that don't stand alone on volume sales.
Yes, I know there are soy milks and goats cheeses etc, but you want the customer to stay with the brand for all the dairy staples, not to be switching to other options.
As you can't hope to cover every dairy product (and you only want the core halo/volume ones in house to protect margins), you build a brand where eventually (when supply allows) you can licence the a2 logo for a very large range of products ('certified a2' etc).
