This reminds me of an article I read about a decade ago, which was about how smart industrial scale refrigeration could be used in a similar way to what the article proposes for water heating. Refrigeration is incredibly energy intensive, and by running it at peak renewable energy generating periods and conversely avoiding running refrigeration during peak fossil fuel generated power periods, it would easily accommodate the use of much more renewable energy with consequently much reduced need for batteries.
