APT publish all the merchants they list with on their website in Australian and New Zealand:

Therefore by scraping the data you can see the change/growth over time. I started doing this in February as a way of tracking their growth. So far I've taken data on 20th Feb and 13th Mar.
In the 21 days/3 weeks 242 merchants (not individual stores) have been added in Australia, and 15 in New Zealand. The Australian growth equates to a 5% gain in merchants, and an average of 11.5 added per day. The NZ growth equates to 16% with 0.7 added per day.
There's only 96 merchants in the New Zealand directory, so plenty of room to grow you would think.
Australia has 4568 merchants in the directory.
According to the ZipPay website (
https://zippay.com.au/stores/) they have 1225 stores in the directory - just 27% of the APT number.
