this was bought from Coles as the cheapest we could find
and looked, lets say rather average at best
and of course was in a cryo vac packaging

then kept in our 'other' fridge at 2 degs,
for about 6weeks
well...........lets say this as the description of the rump steak
would pass as the best beef fillet any one could find, grow or buy
and so..sssooo tender and full of flavour

buying out of date meat and keeping it over a month or more
next, the test will be
to keep the meat for 8weeks past the used by date

Yes it works with beef, I always keep steaks past their use by date before cooking, I also buy aged steak from one local butcher, it is black on appearance but very tender and tasty. ( I must ask how long it has aged )
But I would be cautious with other meats, pork and especially chicken.
