Well what is going to fill that void, all become vegan, well that food doesn't grow by itself either. A lot more vegetables grown require more water, more intense farming, more tractor work, fertiliser spreading, more packaging and so.
So to get rid of a few natural farting cows eating natural grass we move into intensive farming to cut back on CO2.
