what the situation explains to me is that some chefs and restaurants are not keeping up with the times.
if fashion changes, if peoples taste changes, if peoples demands change -
then service industries have to change with them
if they can't - then IMO they should get out of the way and let someone who can.

I find that someone providing a service and bitching about their customers to be just plain thick as two short planks and not worthy of any clientele.
Imaging if this bloke wrote a book on good business ----------- what's his advice on how to treat his customers

Great advice there chef - bound to bring the customers just flooding through the door eh?
First rule - tell you customers to get their poop together -
here's a tip - why not put that on a blackboard outside the restaurant - that will impress people.
In the book - you might as well print ------------- just say 'stuff em' and cook what you like - they are all just an inconvenience in your day anyway - these customers

Lets face it here ------- if you don't want picky customers who have high expectations - you don't open a 'top' restaurant
