Anchovy pesto
Pulse in the food processor the following:
1 to 2 cups basil leaves or mixture of basil cilantro mint and parsley.
¼ cup olive oil truffle oil or cultured butter
1 to 3 tablespoons anchovy paste or anchovies
1 to 3 tablespoons pine nuts
And ‘some’ of the following:
½ cup parmesan or other hard cheese
¼ cup dried tomatoes
1/4 cup olives
2 cloves garlic
1 desert spoon xo sauce
1 desert spoon scrimp sambal paste
A squeeze or two of orange lemon or lime juice
1 teaspoon zest
½ teaspoon jerk paste
A splash liquid smoke
Serve on toast, pizza, run through pasta or with meat and seafood
