Limestone is a soft material so it would be easier to cut and work with hand held tools.
Still an impressive feat.
I understand massive ramps would have been constructed to move the limestone blocks up to the top of the pyramid and then dismantled.
I assume there would be some evidence of this.
Still skills can be learnt then lost.
The ancient Romans invented concrete in the first century then the skill was lost.
