Would seem that the 60+ age group would be a key additional demographic to target with blockchain/NFT games. A lot of people in this age group (baby boomers), many with surplus cash and extra time on their hands.
Key to appeal would seem to be getting the games developed and trialed by people from within that age group. Building in a bit of nostalgia and above all keeping it relatively simple by not including complicated features. Tailor it for larger screens and building in optional help/assists would also be popular additions.
