OK, so for $85 and between 4 and 8 hours of my time I could become an HACCP certified food safety supervisor, SIRRFSA001 – Handle food safely in a retail environment (Food Safety Supervisor) valid for Victoria. I don't think it would be a knowledge big gap to fill. I do thank you for mentioning HACCP though as I've now read through their website in detail and got some insight as to what it's about.
