I'm not a chemist either, so I'm going to take a guess and I know it may seem a little elementary. It has to do with the speed of crystalization. If I remember back to school days the faster the evaporation the smaller but more crystals that will be formed.
Not exactly how that directly effects the Na and K levels but it is a variable.
Wow didn't know that was still buried in my knoggins or at least retainable.
