The demand is there it just needs to be opened up, look at the % increases per market & they haven't really started selling the new frozen product in the US yet. 44% of chefs who had never tried the product say they would buy it. There's no problem with demand it's just a matter of marketing & brand awareness, that's what they didn't have when they had too much stock plus the old frozen product is not the same as fresh/sensory fresh.
