Mozzarella not sold for a loss. It is part of a basket of products including whey powder, cream and lactoferrin et al that is produced from EVERY litre of milk. Suggesting that mozzarella is sold at a loss makes sense if that's the only product made and then the cream whey powder and lactoferrin etc is flushed down the drain. That doesn't happen.
