I think what's happening is the fact that concrete technicians know their mixes because they work with them day in and day out. They know how to make a 20mpa mix, a 25mpa etc using the cement, sand and aggregates they have on hand.
Eden Crete is a new product which they are unfamiliar with so they need to develop mixes trough trial and error to discover how best to utilise it. Once they are confident in getting consistent results there won't be this problem.
